As the first of five curated evening experiences for Premier Financial Alliance’s Sydney incentive program, this welcome dinner at Sydney Town Hall set the tone for an exciting week ahead. Hosting 500 guests from the United States, the event marked the beginning of the group’s journey through a series of unique dining experiences across the city. To deliver a seamless and premium experience, Laissez-Faire Catering, Simply Seated and AV1 worked as a unified delivery team, collaborating closely with program organisers The Travel Corner. Together, the partners looked beyond their core services, supporting the client with the many additional details required to bring each themed evening to life and ensure every guest experience felt intentional from the very first night.

Setting the scene
Guests arrived to the sound of the Town Hall organ, played live as people entered the space and throughout the evening. It was an elegant and unmistakably Sydney moment - music filling the grand hall while guests took in the scale of the architecture around them.
To open the evening, a Welcome to Country was delivered, followed by a Smoking Ceremony, marking the first time the ritual had been performed at Town Hall in more than two years. It was a powerful and respectful beginning that grounded the event in place and culture.
From there, the evening unfolded with live performances from the Australian Girls’ Choir and the much-loved Bushwackers, adding layers of distinctly Australian character to the program.
Designing for the space
Sydney Town Hall doesn’t need much embellishment, but careful production design can help focus attention while preserving the building’s heritage features.
We worked with the venue’s in-house lighting and PA systems, integrating them into the show design to maintain a natural fit with the space. A bespoke lighting designer carefully shaped the look of the room, ensuring the lighting complemented the architecture while supporting the flow of the evening.
A custom portrait-ratio LED screen was designed specifically for the room. The format allowed for clear content visibility without obscuring the Town Hall organ or the building’s key architectural elements. It’s a small design decision that made a big difference - balancing modern display technology with the heritage of the venue.
Content & visual identity
The visual theme leaned into an Australiana aesthetic, designed to set the tone for the journey ahead. Stylised native flora and fauna formed the backbone of the content design, adapted to suit both the scale of the screen and the character of the hall.
The result was content that felt celebratory and distinctly Australian, without overpowering the environment.
Capturing the Moment
With a program packed full of performances and ceremonial moments, capturing the action was key.
An 11-camera setup was deployed, including eight PTZ cameras and three additional cameras, two of which were wireless roaming units. The camera plan enabled IMAG (image magnification) on the LED screen while simultaneously recording the evening’s key moments.
Between the live music, ceremony, and stage activity, there was plenty to capture.
Culinary Collaboration
To ensure the dining experience matched the scale and quality of the production, Laissez-Faire Catering was engaged as a consultant to collaborate with Sydney Town Hall and Doltone House.
Laissez-Faire provided strategic oversight on menu design, scheduling, floor planning, and sales quote adjustments. The team also managed the menu and beverage pairing tastings on the client’s behalf, ensuring the final selections were cohesive, distinctive, and delivered to the highest standard for the evening.
A Night Built for Sharing
From the first performance to the final applause, the room was alive with energy. Phones were out. Guests were posting to social media. The moment was spreading beyond the room in real time.
Sometimes the first event in a series sets the tone for everything that follows.
This one did exactly that - first cab off the rank, and doing it in style.
